DUTIES AND RESPONSIBILITIES:
Job Summary:
We are looking for a highly creative and technically skilled R&D Chef to drive the culinary innovation of Daily's Diet. This role blends recipe creation, adaptation, and scaling with an eye for nutrition and operational efficiency. You will be working closely with our nutritionists, production team, and kitchen staff to bring consistent, flavorful, and calorie-counted meals to life.
Recipe Development
- Create new menu items aligned with brand standards and calorie targets.
- Reverse-engineer dishes from other establishments for inspiration.
- Adapt and refine recipes from external sources (e.g., internet, cookbooks).
Testing & Refinement
- Run trials in the test kitchen and gather feedback.
- Adjust recipes for flavor, nutritional balance, and portion control.
Scaling for Production
- Convert small-batch recipes into standardized, large-scale production versions.
- Ensure consistent taste, texture, and presentation in bulk cooking.
Quality Assurance
- Conduct taste tests and plating checks during production.
- Train and guide line cooks on new recipes and cooking techniques.
Documentation
- Write clear, detailed recipe sheets with measurements, steps, and plating instructions.
- Maintain updated recipe archives and costing sheets.
REQUIREMENTS
- Minimum 3–5 years of professional kitchen experience;
- R&D or test kitchen experience preferred.
- Strong background in recipe development, food costing, and scaling for volume.
- Knowledge of food safety standards and HACCP protocols.
- Culinary degree or equivalent hands-on experience.
- Creativity combined with precision and attention to detail.
- Must be physically fit
Experience:
- Previous experience with control food and Labor cost, demonstration cooking, menu development, and pricing and development of culinary team preferred.
Job Type: Full-time
Pay: Php40, Php65,000.00 per month
