The Concept Sous Chef works with the Executive R&D Chef to create and refine menu innovations, oversee trials, and scale recipes while ensuring cost efficiency, food safety, and operational feasibility. This role also leads junior staff and upholds high kitchen standards.
JOB SCOPE:
- Assist in the development, testing, and refinement of new menu items, recipes, and culinary innovations under the R&D team.
- Collaborate in conducting trials, documenting formulations, and ensuring consistency from ideation to execution.
- Support the Executive R&D Chef in sourcing ingredients, prepping tastings, and scaling recipes for pilot and operational use.
- Maintain strict hygiene, safety, and organizational standards during all R&D activities.
- Contribute creative input while respecting cost, operational feasibility, and brand identity.
JOB QUALIFICATIONS:
- Graduate of Culinary Arts; TESDA NC II/III in Cookery preferred
- ServSafe, HACCP, or equivalent certification is an advantage
- At least 2 years' culinary experience in Japanese cuisine
- 1 year of exposure to menu development, trials, or product launches is an advantage
- Strong culinary foundation: knife skills, mise en place, precision cooking
- Knowledge of food costing, inventory, and recipe scaling
- Familiar with food experimentation, recipe documentation, and ingredient behavior
- Effective leader: able to guide junior staff and manage R&D prep
- Highly organized, dependable, and efficient under pressure
- Strong communicator with focus on quality, consistency, and improvement
- Curious, adaptable, detail-oriented, and collaborative
- Proficient in Excel, Google Sheets, or kitchen management software
