Job Summary

The R&D Chef is responsible for conceptualizing, testing, and developing innovative dishes for Japonesa, a Japanese-Peruvian fusion restaurant. This role focuses on culinary creativity, research into global food trends, and menu innovation while ensuring alignment with Japonesa's unique brand identity. The R&D Chef will collaborate with the Head Chef and management team to introduce new flavors, refine existing recipes, and elevate the overall dining experience.

Key Responsibilities

  • Research and develop new dishes, recipes, and beverage pairings that highlight Japanese-Peruvian fusion.
  • Conduct kitchen trials, tastings, and evaluations to perfect flavors, textures, and presentation.
  • Collaborate with the Head Chef and management to design seasonal menus, limited-time offers, and promotional items.
  • Stay updated on culinary innovations, ingredient sourcing, and food industry trends for application in Japonesa's menu.
  • Experiment with cooking techniques, plating styles, and flavor combinations to keep the menu fresh and exciting.
  • Work with suppliers to source unique and high-quality ingredients.
  • Standardize recipes and ensure proper documentation for training and consistency.
  • Provide training and guidance to kitchen staff on new dishes and techniques.
  • Ensure all R&D activities comply with food safety, hygiene, and quality standards.
  • Conduct competitor analysis to identify opportunities for differentiation.
  • Partner with marketing and operations teams to support product launches, events, and promotions.
  • Evaluate guest feedback and sales performance of new menu items to refine offerings.
  • Contribute to long-term culinary strategy and brand development for Japonesa.

Qualifications

  • Culinary degree or equivalent professional training from a recognized institution.
  • Proven experience as a Chef with a focus on Japanese, Peruvian, or fusion cuisines.
  • Strong background in recipe development, food innovation, and R&D in the F&B industry.
  • Creative thinker with excellent knowledge of flavor profiles, techniques, and global food trends.
  • Exceptional attention to detail in taste, presentation, and plating.
  • Ability to translate innovative concepts into practical, cost-efficient, and scalable dishes.
  • Strong organizational and documentation skills for recipe standardization.
  • Effective communication and collaboration skills with both kitchen and management teams.
  • Passion for innovation and pushing culinary boundaries while respecting Japonesa's brand identity.
  • Flexible schedule, with willingness to test, trial, and adjust dishes as needed.
