POSITION SUMMARY

This position manages the daily kitchen operation, maintains high standard of Hygiene and HACCP in Pastry and Bakery kitchen, provides daily training to direct reports, maintains proper inventory of the kitchen and fridges and helps in the operation of the Main Hotel Kitchen when required or when asked by the Executive Pastry Chef during Banquet functions.

DUTIES & RESPONSIBILITIES

  • Plan and implement effective promotions in coordination with the Executive Chef's review and approval
  • In charge of the production of all cakes and special cake orders, in a fast-paced environment
  • Oversee the delivery of the cakes to the guest as per requirement
  • Develop and implement the menus
  • Drive hygiene compliance and implementation HACCP programs
  • Ensure maintenance of established standards
  • Ensure completeness in forwarding all outlet reports, schedules, standard recipes, menus, food presentation photographs and correspondences to the Executive Pastry Chef and Executive Chef on a regular basis
  • Plan and oversee staff performance and schedule training activities, if needed
  • Monitor, review and approve staff daily work schedule and planned leaves
  • Liaise with the Stewarding Manager in order to ensure high standards of cleanliness are maintained in all areas of the kitchen, such as machinery, small Kitchen equipment, floors and fridges.

JOB REQUIREMENTS

  • Graduate of hospitality or culinary program or from Hospitality Management Schools and or completed Culinary Apprenticeship Trainings
  • With 12 years work experience in Pastry, of which 4 years as sous chef or higher position
  • Must have full knowledge of sanitation requirements in food handling
  • Knowledgeable of different cooking styles and recipe development.
  • Good English communication skills
  • Organize and comfortable working in a high-pressure environment
  • Amenable working on flexible schedules even holidays or weekends
  • Has the ability to quickly and fairly delegate job tasks
  • Effective problem-solving skills and can-do multitasking
  • Detail oriented and goal driven
  • Has strong leadership quality, training techniques and organizational skills
  • Sound knowledge of different cooking styles and recipe development

Job Types: Full-time, Permanent

Pay: Php90, Php100,000.00 per month
