We are seeking an exceptional Head Baker to lead and inspire our commissary baking operations. This role requires not only mastery in bread and pastry production but also strong leadership to guide a team toward excellence in quality, efficiency, and innovation. The Head Baker will oversee daily production, develop new recipes, and ensure that all products consistently meet the highest standards of taste, presentation, and consistency.
Key Responsibilities:
- Lead, train, and mentor a team of bakers and pastry staff, fostering a culture of discipline, teamwork, and continuous improvement.
- Oversee all aspects of production, from ingredient preparation to baking and finishing, ensuring accuracy and quality in every product.
- Develop and standardize recipes, introducing innovative baked goods while maintaining commissary efficiency.
- Implement and enforce strict food safety, hygiene, and sanitation standards in compliance with regulatory requirements.
- Monitor inventory, manage production schedules, and coordinate with other departments to meet commissary demand.
- Troubleshoot production issues and ensure smooth operations under tight schedules.
- Drive consistency in output while upholding artisanal craftsmanship and creativity.
Qualifications:
- Bachelor's degree in Hospitality Management or other related courses.
- Proven experience as a Head Baker or senior baking professional in a commissary, hotel, or large-scale bakery.
- Expertise in bread-making, dough fermentation, and advanced baking techniques, with strong knowledge of both traditional and modern methods.
- Strong leadership and people-management skills, with the ability to inspire and develop a team.
- Excellent organizational and time management abilities to handle high-volume production.
- Keen attention to detail, creativity in recipe development, and a commitment to quality excellence.
- Proficiency in commissary operations, workflow planning, and production efficiency.
