I JOB SUMMARY
Own the end-to-end development of hot savory items, catering products, cakes, cookies, and pastries for enterprise clients and internal brands. Lead concepting, trials, costing, sourcing, scale-up, documentation, and launch—balancing flavor, quality, yield, food safety, equipment efficiency, and margin.
II DUTIES AND RESPONSIBILITIES
A Specific Responsibilities
1. Product and Menu Development
a. Create and iterate new SKUs across hot kitchen and bakery categories; adapt products for banquet/catering, boxed meals, and retail packs.
b. Build gold-standard recipes, specs, and visual plating/packing guides.
c. Conduct shelf-life tests, hold-time studies, and transport/temperature trials for catering.
2. Costing, Margin & Efficiency
a. Own recipe costing, yield analysis, and BOMs; hit target COGS% and contribution margins.
b. Optimize batch sizes, portioning, waste, and labor minutes per unit; recommend make/buy decisions.
c. Translate concepts to commissary-scale processes with clear SOPs and equipment load plans.
3. Equipment & Process
a. Specify and validate kitchen/bakery equipment (ovens, mixers, blast chillers, hot-hold, packaging lines).
b. Design efficient process flows (mise en place, baking schedules, cook-chill, reheat protocols).
4. Sourcing & Supplier Management
a. Source raw materials and ingredients (core and specialty), negotiate with vendors, and set quality specs, together with Purchasing Dept.
b. Qualify alternates for cost/risk mitigation; monitor market prices and availability.
5. Quality & Compliance
a. Work with QA on HACCP/FSMS, allergen controls, labeling, and regulatory compliance if necessary.
b. Create training materials; train Commissary staff, hand over to Ops with SOPs, CCPs, and visual aids.
6. Client & Cross-Functional Collaboration
a. Work closely with Sales on client presentations and tastings; tailor products to enterprise client briefs and price points.
b. Align with Marketing on naming, claims, portioning, packaging, presentation and launch calendars.
c. Support Sales with technical product details, cost sheets, and preparation methods.
