Position Overview

The R&D Food Technologist ensures that all recipes developed by the R&D team are accurate, replicable, and operationally sound across all MCW restaurant brands.

This role validates recipes step-by-step, identifies potential points of failure, documents detailed procedures with photos, and supports both the training and operations teams to ensure consistency in quality and cost.

The position serves as the
technical backbone of recipe standardization
— ensuring every dish produced across different concepts meets MCW's culinary and brand standards.

Key Responsibilities

1. Recipe Validation and Standardization

  • Review and validate recipe
  • Conduct controlled tests to confirm that each step, timing, and ingredient measurement produces consistent results.
  • Document all recipes in full detail (portioning, timing, equipment used, temperature, etc.) to ensure repeatability.
  • Verify that standard recipes are clear and usable by kitchen and training teams.

2. Process Documentation and Scenario Testing

  • Create step-by-step photo documentation for every recipe, highlighting key control points and potential errors.
  • Simulate possible
    critical and failure points
    in food preparation to identify root causes of deviation.
  • Develop corrective measures or standard operating notes to minimize variability in production.
  • Update recipes and documentation when modifications are approved after testing.

3. Complaint and Deviation Analysis

  • Coordinate with operations when there are product complaints or recipe execution issues.
  • Analyze probable causes (deviation in process, ingredients, or training).
  • Replicate issues in a controlled environment to confirm root cause and recommend solutions.
  • Work with R&D chefs and trainers to communicate revisions or retraining needs.

4. Training Support

  • Work with the training team to ensure training materials reflect the latest validated standards.
  • Guide trainers on how to explain or demonstrate recipes effectively to store teams.
  • Participate in initial training sessions to verify accuracy and clarity of recipe instruction.

5. Food Cost Validation

  • Validate recipe costing by checking portion yield, wastage, and actual consumption during testing.
  • Coordinate with R&D chefs, bakers, and beverage developers to maintain food cost accuracy.
  • Alert R&D or purchasing if changes in ingredient quality or yield affect costing.

6. Investigation and Continuous Improvement

  • If new failures or inconsistencies appear in operations, investigate and conduct trials to isolate causes.
  • Collaborate with R&D to update procedures, adjust recipes, or propose new preparation methods.
  • Maintain an organized database of test results, recipe versions, and validation logs.
