Food Records Inc. (FRI) is the backbone of a growing group of food and beverage (F&B) concepts — from specialty coffee shops like Mabuhay Craft Coffee, to modern street food brands like Binondo Boys, Tost (our in-house bakery), and more on the way.
As the central commissary, FRI supports all our outlets by handling kitchen operations, logistics, and staffing. It's the backbone and "mothership" of our growing F&B brands — with a dedicated team working behind the scenes to deliver exceptional food every day.
JOB TITLE: Commissary staff/Line Cook/Commis 3
LOCATION: Food Records Inc. Commissary - Scout Rallos, Quezon City with possible deployment to concept stores around Quezon City
EMPLOYMENT TYPE: Full-time, On-site
ROLE OVERVIEW:
As a Commissary Prep Cook / Line Cook, you are at the heart of our production operations. You will prepare, portion, and cook ingredients and menu items that supply our outlets daily. This role requires precision, consistency, and strong adherence to recipes and standards. KEY RESPONSIBILITIES:
Food Preparation & Cooking
- Prepare ingredients, sauces, mixes, and pre-cooked items according to standard recipes.
- Execute cooking tasks with precision following portion sizes, quality standards, and timelines.
- Assist in batching and bulk production for daily and weekly commissary requirements.
- Maintain consistency in taste, texture, and presentation across all prepared items.
Production & Operations Support
- Follow daily prep lists and production plans set by the Supervisor or Operations.
- Ensure timely completion of all prep needed for dispatch to outlets.
- Assist in receiving ingredients and organizing them in storage areas as needed.
- Participate in daily coordination with kitchen staff to streamline workflow.
Quality & Food Safety Compliance
- Follow strict hygiene and food safety practices, including proper handling, labeling, and storage.
- Perform regular checks for freshness, temperature, and safe preparation procedures.
- Ensure workstation cleanliness and proper sanitation before, during, and after shifts.
- Report any quality issues, shortages, or operational concerns to the Supervisor.
Documentation & Record-Keeping
- Record production yields, wastage, batch logs, and recipe adherence forms.
- Assist in updating prep lists, inventory usage sheets, and dispatch-related documents.
- Properly label and date all prepped items following FIFO and commissary guidelines.
Dispatch & Commissary Coordination
- Coordinate with dispatch staff to prepare and pack items for delivery.
- Ensure all products for dispatch meet quality, quantity, and packaging standards.
- Support checking of dispatch lists and delivery reports when required.
REQUIRED QUALIFICATIONS:
- High school graduate or equivalent.
- Experience as a prep cook, line cook, or commissary staff.
- Basic knowledge of food handling and preparation techniques.
- Ability to follow standardized recipes and instructions.
- Physically fit for a fast-paced kitchen environment.
Preferred Qualifications:
- Experience in a commissary, cloud kitchen, or high-volume production environment.
- Knowledge of HACCP, food safety, and sanitation procedures.
- Ability to operate kitchen equipment efficiently and safely.
