· Responsible together with the Executive Chef/Sous Chef, to ensure all his direct subordinates are fully aware of company standards concerning food production, food presentation, food handling, controlling procedures and the vessel sanitation and health program.

Functions and Responsibilities:

  1. The Chef de Partie shall be aware of and able to follow on USPH standards and procedures.

  2. Communicate to the Sous Chef/Executive Chef must be followed in the most efficient way.

  3. Implement working schedules for all Pastry Cooks and Pastry Utility personnel.

  4. Constantly be aware of stocks levels and stock quality of all pastry and bakery items.

  5. Shall base production on the number of passengers in the food outlets and should be planned with the feedback of the Executive Chef/Sous Chef, regarding passenger numbers for each meal.

  6. Check and ensure that all pastry products are consistently prepared at the highest quality standard.

  7. Shall take responsibility to the entire food production of pastry.

  8. Shall use the standardized recipes and presentation photos as a guideline.
