Founded in 1982, Zensho has grown into a group with more than 10,000 restaurants and retail outlets, with 276.5 billion pesos annual sales. As of March 31, 2020, Zensho has firmly established itself at the top position among foodservice companies in Japan.
Among Zensho's about 20 restaurant brands, Sukiya is our top and biggest brand. Our signature dish is gyudon, Japan's favorite beef rice bowl. Now, Sukiya is known as Japan's No. 1 Gyudon restaurant chain with about 2,000 outlets.
Currently, Sukiya has seven branches located at Glorietta 2 and SM Manila, SM Megamall, Waltermart North Edsa, Festival Mall Alabang, SM East Ortigas and Mezza Residences. is seeking an experienced Commissary Manager to oversee the efficient and effective operation of our commissary facility. In this full-time role based in Makati City, Metro Manila, you will be responsible for managing all aspects of the commissary, ensuring the timely production and delivery of high-quality food products to our network of restaurants.
What you'll be doing
- Manage the day-to-day operations of the commissary, including production planning, inventory management, and quality control
- Develop and implement efficient processes and procedures to optimise commissary performance
- Oversee the procurement of raw materials and ensure adherence to budgets and cost targets
- Manage and develop a team of commissary staff, including chefs, food preparation workers, and logistics personnel
- Collaborate with the operations team to ensure seamless delivery of products to our restaurants
- Ensure compliance with all relevant food safety and hygiene regulations
- Continuously seek opportunities for process improvements and cost-savings
What we're looking for
- Minimum 5 years of experience in a commissary or food production management role, preferably within the hospitality industry
- Strong understanding of food production processes, inventory management, and quality control
- Excellent leadership and team management skills, with the ability to motivate and develop a team
- Proficient in budget planning and cost control
- Excellent communication and interpersonal skills, with the ability to collaborate effectively with cross-functional teams
- Familiarity with relevant food safety regulations and best practices
- Degree in Culinary Arts, Food Science, or a related field is preferred
