Job Purpose:

The Food and Beverage Manager is responsible for overseeing all operations within the Food and Beverage Department, ensuring profitability, quality, and guest satisfaction. This role focuses on managing restaurant, bar, room service, and event operations while maintaining cost efficiency, high service standards, and compliance with health and safety regulations.

The F&B Manager ensures alignment with the company's goals by optimizing revenue, controlling expenses, leading the team effectively, and upholding the brand's reputation for excellent dining and service experiences.

A. Operational Management

  • Supervise daily operations of all F&B outlets (restaurants, bars, room service, catering, and events).
  • Coordinate between kitchen and service departments to maintain smooth workflow.
  • Implement and monitor standard operating procedures (SOPs) for service quality and consistency.

B. Financial and Revenue Management (P&L)

  • Prepare, review, and analyze the department's Profit and Loss (P&L) statement.
  • Develop cost-control measures to maintain target food cost and labor cost percentages.
  • Create strategies to increase sales and revenue through upselling, promotions, and special event.
  • Monitor pricing, menu, and profitability of each outlet.

C. Inventory and Cost Control

  • Supervise purchasing, receiving, and storage of food and beverage supplies.
  • Maintain accurate inventory records and ensure proper stock rotation.
  • Reduce wastage and pilferage through strict control systems.

D. Catering, Events, and Functions

  • Oversee the planning and execution of banquets, private functions, and catering services.
  • Ensure event setups meet client expectations and company standards.
  • Coordinate with Sales, Events, and Kitchen teams for smooth execution and profitability.

E. Staff Management and Development

  • Lead, motivate, and train all F&B team members to achieve operational goals.
  • Conduct performance evaluations, coaching, and disciplinary actions when necessary.
  • Schedule staff effectively based on business demands.

F. Customer Service and Guest Relation

  • Handle guest feedback and resolve complaints promptly and professionally.
  • Maintain a strong presence in dining areas to monitor service delivery.
  • Implement programs to improve guest satisfaction ratings.

G. Health, Safety, and Compliance

  • Ensure compliance with food safety, sanitation, and occupational safety regulations.
  • Conduct regular inspections and staff training on hygiene standards.

H. Marketing and Promotions

  • Collaborate with the Marketing team to develop promotional campaigns and themed events.
  • Analyze market trends and competitor performance to maintain competitiveness.

I. Reporting and Administration

  • Submit daily, weekly, and monthly reports on revenue, costs, and inventory.
  • Maintain updated records on licenses, permits, and vendor contracts.

QUALIFICATIONS

  • Bachelor's Degree in Hotel and Restaurant Management or equivalent

  • At least 5 – 10 years' experience as an F&B Manager or Assistant Manager in a hotel/resort setting

  • Strong leadership, financial management, and customer service skills

  • Excellent command of English (oral and written)

  • Flexible, organized, and results-driven
