- Key Responsibilities
Operations & Quality Assurance
- Facilitates regular coordination meetings with station leads to ensure smooth kitchen operations.
- Organizes food portioning sessions to reinforce consistency and standardization.
- Carries out random skill and competency checks among team members to maintain product quality.
Administrative & Inventory Control
- Prepares and updates weekly administrative records, including:
- Shift schedules
- Attendance logs and reports
- Memos for commendations or disciplinary actions
- Monitors purchasing costs to ensure they remain within 33% of total sales; implements corrective actions when limits are breached.
- Oversees usage of BOH supplies and utilities to stay within budget and introduces cost-efficient measures when necessary.
- Submits comprehensive monthly inventory reports to the head office, detailing:
- Kitchen output and production levels
- Status of purchase orders and requisitions
- Inventory audit results (conducted twice a month or more)
- Reviews and forwards all inventory-related documentation, such as:
- Stock transfers
- Deliveries and purchases
- Spoilage and wastage reports
- Ensures accurate and timely inventory tracking and reconciliation in compliance with internal protocols.
Team Support & Development
- Provides immediate coaching and constructive feedback to kitchen team members to help enhance performance and uphold service standards.
