Position Overview

The
Coffee and Beverage Development Officer
is responsible for the research, development, and standardization of all coffee and beverage products across MCW Restaurant Group brands.

This role combines craftsmanship and experimentation — focusing on coffee roasting, beverage formulation, and bar operations refinement to ensure each concept offers drinks that are distinctive, consistent, and aligned with brand identity.

The R&D Barista also supports training, calibration, and quality control efforts to ensure every beverage served across the group meets MCW's standards of excellence.

Key Responsibilities

1. Beverage Research & Development

  • Develop and test beverage recipes including coffee, alcohol-based drinks, and juice concoctions.
  • Conduct sensory evaluations and adjust recipes based on taste, presentation, and operational efficiency.
  • Collaborate with culinary and marketing teams for seasonal launches and brand-specific beverages.
  • Document standardized recipes (SOPs) and ensure proper rollout to stores.

2. Coffee Roasting & Quality Control

  • Manage roasting operations — profile testing, cupping, and batch quality checks.
  • Maintain consistency of roast profiles suited to each brand's flavor direction.
  • Evaluate bean quality, freshness, and inventory rotation.
  • Provide feedback on coffee sourcing and equipment calibration.

3. Barista Training & Support

  • Train and upskill baristas and beverage staff across all MCW brands in brewing standards, recipe execution, and presentation.
  • Conduct calibration sessions and periodic quality audits at store level.
  • Develop and maintain training materials, recipe cards, and visual references.
  • Support store openings and beverage area setups.

4. Beverage Operations

  • Ensure beverage stations adhere to MCW's cleanliness, safety, and service SOPs.
  • Recommend beverage tools, glassware, and machines suitable for each concept.
  • Work with purchasing and operations to ensure proper stock and ingredient quality.
  • Evaluate beverage sales performance and guest satisfaction.
  • Collaborate with Operations and Finance teams to review beverage food cost performance, ensuring recipes remain cost-efficient and aligned with target margins. Recommend adjustments in formulation, portioning, or sourcing when costs deviate from standards.

5. Collaboration & Innovation

  • Partner with brand heads, chefs, and marketing for beverage concepts that enhance menu storytelling.
  • Keep up to date with global beverage trends, ingredients, and brewing technologies.
  • Introduce new techniques and ingredients that push creative boundaries while maintaining operational practicality.

Qualifications

  • At least 5 years of experience as a professional barista or coffee trainer.
  • Proven experience in beverage R&D or product development.
  • Strong sensory skills, creativity, and understanding of recipe costing.
  • Technical proficiency in espresso machines, grinders, and roasting systems.
  • Strong communication skills and passion for beverage innovation.
