Job Description:
Under the direction of Head Baker, the Senior Baker is responsible for the production of multiple bakery products from a specified menu at a commercial pace, and prepare bakery recipes in the operation according to culinary, production and quality standards with minimum or no supervision and wastage.
Duties and Responsibilities
§ Weigh, sift, measure, shape, and mix baking ingredients;
§ Prepare and bake breads, rolls, cookies, pies, cakes, biscuits, puddings, cobblers, brownies and other baked good items.
§ Accurately and appropriately utilize the various bakery equipment and if needed, assist with training and monitoring others in its safe usage.
§ Make sure that work station is clean, orderly, and organized before and after shift
§ Follow established timelines for food production as required by delivery times and production schedule
§ Ensure that bakery operation procedures and hygiene meet food safety standards and regulations
§ Wash and clean baking utensils and store neatly at designated storage area at the end of shift
§ Communicate effectively with supervisors, purchasing agent, executive chef, manager
§ Assist with inventory control and supplies ordering task
§ Anticipate re-stocking of baking ingredients based on predictable movement of bakery items
Skills
§ Skill to prepare bakery recipes in the operation according to culinary, production and quality standards
§ Time management and organizational skills to review daily production needs and plan daily work schedule
§ Must have basic bakery skills and a good understanding of bakery terminology and equipment
§ Demonstrated knowledge in food preparation techniques such as basic baking, cake and pastry decoration
§ Previous experience in the preparation of basic bakery items for a high- volume bakery
§ Knowledge of the rules and procedures of sanitation and safety as they apply to production, storage and service within a food establishment
§ Skill in operating equipment such as mixers, food processors, food cutters, slicers, blenders, impingers, gas range, etc.
§ Ability to measure dry and liquid foodstuffs in units of measurement such as cup, pint, quart, pound, and ounce to properly adhere to recipe and production requirements
§ Ability to stand continuously throughout an eight- hour (or more) shift
§ Ability to frequently lift items weighing up to fifty pounds such as bags of supplies and cases of food products
§ Ability to stand, climb, stoop, push and crouch for extended periods of time as required to complete job duties
§ Skill in adding and subtracting whole numbers, decimals and fractions sufficient to properly adhere to production and customer flow parameters
§ Ability to perform effectively under conditions of fluctuating workload
§ Ability to interact in a team-based environment
Qualifications:
- Vocational Diploma or Certificate in Baking
- At least 2 years relevant experience
- Has experience working in bakery
- Attention to detail, especially when performing quality inspections on ingredients and products.
- Basic math and computer skills.
