Job Summary:

The Head Chef at Japonesa leads the culinary team in delivering innovative Japanese–Peruvian fusion dishes that reflect the restaurant's unique Nikkei concept. This role ensures exceptional food quality, authentic yet creative menu offerings, and efficient kitchen operations to provide guests with a memorable dining experience.

Duties and Responsibilities:
  • Develop and innovate menus that highlight Japanese–Peruvian fusion cuisine, balancing tradition and creativity.

  • Supervise, train, and inspire kitchen staff to maintain high standards of quality and efficiency.

  • Ensure consistency in taste, presentation, and portioning of all dishes.

  • Manage food inventory, supplier relations, and cost control to achieve profitability targets.

  • Maintain strict compliance with health, hygiene, and food safety standards.

  • Collaborate with management on seasonal promotions, new dishes, and signature concepts unique to Japonesa.

  • Monitor and maintain kitchen equipment to ensure smooth operations.

  • Oversee food preparation and timely service, especially during peak dining hours.

  • Keep updated with global culinary trends, introducing fresh ideas into the Japonesa dining experience.

  • Foster a positive, professional, and collaborative kitchen culture.

Qualifications:
  • Proven experience as Head Chef or Executive Chef, preferably in Japanese, Peruvian, or fusion restaurants.

  • Strong leadership and team management skills.

  • Creative and passionate about developing fusion menus that reflect the brand identity of Japonesa.

  • Excellent organizational and multitasking abilities.

  • Knowledge of food costing, budgeting, and inventory control.

  • Culinary degree or specialized training in Japanese or Peruvian cuisine (preferred).

  • Ability to work under pressure in a fast-paced, high-end dining environment.
