DUTIES AND RESPONSIBILITIES

  • Recipe Development
  • Create new menu items aligned with brand standards and calorie targets.
  • Reverse-engineer dishes from other establishments for inspiration.
  • Adapt and refine recipes from external sources (e.g., internet, cookbooks).
  • Testing & Refinement
  • Run trials in the test kitchen and gather feedback.
  • Adjust recipes for flavor, nutritional balance, and portion control.
  • Scaling for Production
  • Convert small-batch recipes into standardized, large-scale production versions.
  • Ensure consistent taste, texture, and presentation in bulk cooking.
  • Quality Assurance
  • Conduct taste tests and plating checks during production.
  • Train and guide line cooks on new recipes and cooking techniques.
  • Documentation
  • Write clear, detailed recipe sheets with measurements, steps, and plating instructions.
  • Maintain updated recipe archives and costing sheets.

REQUIREMENTS

  • Minimum 3–5 years of professional kitchen experience; R&D or test kitchen experience preferred.
  • Strong background in recipe development, food costing, and scaling for volume.
  • Knowledge of food safety standards and HACCP protocols.
  • Culinary degree or equivalent hands-on experience.
  • Creativity combined with precision and attention to detail.

Experience:

  • Previous experience with control food and Labor cost, demonstration cooking, menu development, and pricing and development of culinary team preferred.

Job Type: Full-time

Pay: Php30, Php45,000.00 per month
