The Line Cook is responsible for preparing and cooking meals in accordance with the hospital's concessionaire menu, food safety standards, and sanitation requirements. This role ensures timely, nutritious, and consistent food service for patients, staff, and visitors while maintaining strict cleanliness and hygiene protocols suitable for a healthcare environment.

Key Responsibilities1. Food Preparation & Cooking

  • Prepare and cook menu items according to standard recipes, portion sizes, and dietary guidelines.
  • Ensure all meals are prepared on time, especially during peak hospital meal periods (breakfast/lunch/dinner).
  • Assist in food prep such as chopping, marinating, portioning, and assembling meals.

2. Food Safety & Sanitation (Highly Critical in Hospital Setting)

  • Follow DOH and company food safety standards at all times.
  • Maintain strict hygiene, including proper handwashing and use of gloves, masks, and hairnets.
  • Ensure proper storage temperatures of raw and cooked ingredients.
  • Prevent cross-contamination and maintain cleanliness of workstations.

3. Kitchen Operations

  • Operate kitchen equipment safely (stoves, ovens, grillers, fryers, steamers).
  • Assist in receiving deliveries and inspecting product quality.
  • Ensure proper labeling, dating, and rotation (FIFO).
  • Monitor stock levels and report low supplies or issues to the supervisor.

4. Team Coordination

  • Work closely with fellow kitchen staff and service crew to ensure fast and smooth meal service.
  • Support front-line servers when needed.
  • Communicate effectively with supervisors regarding menu changes or production concerns.

5. Compliance & Documentation

  • Follow hospital rules and access protocols within the premises.
  • Comply with concessionaire SOPs, including uniform standards and hygiene policies.
  • Assist in daily kitchen logs (temperature sheets, production logs, waste logs if required).

Qualifications

  • High school graduate or vocational course in culinary/food service is an advantage.
  • At least 1 year of cooking experience in a fast-paced environment (restaurant, cafeteria, commissary).
  • Knowledge of food safety, sanitation, and basic nutrition.
  • Physically fit and able to stand for long hours.
  • Ability to work under pressure, especially during peak meal times.
  • Honest, reliable, and adaptable to hospital protocols.
  • Willing to work shifting schedules, weekends, and holidays.
