Position Description:

A skilled and detail-oriented Butcher assigned to the commissary of a Filipino restaurant located in Makati City. Responsible for preparing, cutting, and portioning various meat products used in daily restaurant operations. Ensures that all meat handling, storage, and preparation follow strict food safety and sanitation standards. Works closely with the kitchen and commissary team to maintain consistent product quality, minimize waste, and support efficient food production.

Key Responsibilities:

  • Cut, trim, debone, and portion different types of meat (pork, beef, chicken, and seafood) based on menu and kitchen requirements.
  • Properly store, label, and rotate meat to ensure freshness and prevent spoilage.
  • Maintain cleanliness and sanitation of work areas, tools, and equipment in accordance with hygiene and safety regulations.
  • Assist in preparing pre-cut or marinated meats used in Filipino dishes such as adobo, sinigang, barbecue, and tapa.
  • Monitor inventory of meat supplies and report any shortages to the commissary supervisor.
  • Operate butchering equipment safely and ensure preventive maintenance is followed.
  • Dispose of waste properly and follow standard kitchen safety practices.
  • Support the commissary team in daily food preparation and production tasks.

Skills and Qualifications:

  • Knowledge of meat cutting, portioning, and preparation techniques
  • Familiar with Filipino cuisine and meat preparation styles
  • Excellent knife-handling and safety awareness
  • Understanding of food safety, hygiene, and storage standards
  • Physically fit and able to perform manual tasks for extended hours
  • Strong time management, organization, and teamwork skills

Preferred Experience:

  • 1–2 years of experience as a Butcher or Meat Cutter, preferably in a commissary or restaurant setting
  • Experience working with Filipino food preparation is an advantage
