Job Summary:
The Purchasing & Inventory Officer is responsible for overseeing the procurement of goods, accurate salary computation, employee work scheduling, and inventory management to ensure smooth day-to-day restaurant operations. This role ensures the timely availability of quality supplies, accurate payroll, and well-managed staff schedules, while maintaining stock levels for kitchen and dining service.
Key Responsibilities:
Purchasing
- Source, evaluate, and negotiate with suppliers for fresh produce, meats, beverages, and other restaurant supplies.
- Ensure purchased items meet the restaurant's quality and safety standards.
- Prepare purchase orders and coordinate with kitchen staff for supply requirements.
- Monitor supplier performance and manage relationships for consistent deliveries.
Salary Computation
- Accurately compute salaries, overtime, tips, allowances, and deductions for restaurant staff.
- Ensure timely salary disbursement while maintaining confidentiality.
- Resolve payroll concerns with staff and coordinate with HR and Accounting for compliance with labor laws.
Employee Work Schedule
- Prepare weekly work schedules for kitchen, dining, and support staff, ensuring coverage for peak hours and special events.
- Track attendance, leaves, and shift changes.
- Adjust schedules based on customer volume, seasonal trends, and staff availability.
Stocks Inventory
- Monitor and record inventory of food, beverages, condiments, and restaurant supplies.
- Conduct daily and weekly stock counts to ensure accuracy.
- Implement stock rotation (FIFO/FEFO) to prevent spoilage.
- Coordinate with kitchen staff for timely replenishment of ingredients and consumables.
Stock Clerk Functions
- Receive, inspect, and store deliveries in proper storage areas (dry, chilled, frozen).
- Label and arrange stock for easy access and proper tracking.
- Prepare and process stock transfers between kitchen and bar stations.
- Maintain cleanliness, orderliness, and food safety standards in storage areas.
Restaurant Day-to-Day Support
- Assist in monitoring daily food and beverage consumption to control waste and costs.
- Ensure the restaurant is adequately stocked for service, including tableware and cleaning supplies.
- Coordinate with chefs, servers, and managers to anticipate supply needs during peak hours.
- Support in preparing reports on daily sales vs. stock usage to improve forecasting.
- Assist in ensuring compliance with health, safety, and sanitation standards.
Qualifications:
- Bachelor's degree in Business Administration, Supply Chain, Hotel & Restaurant Management, or related field.
- At least 1–2 years of experience in purchasing, inventory, or payroll in a restaurant or hospitality setting.
- Strong understanding of food safety and handling practices.
- Proficient in MS Office and inventory/purchasing systems.
- Strong organizational skills and attention to detail.
- Good communication skills and ability to work under pressure.
Work Schedule:
- 9AM - 6PM, 5 days a week with one rest day, flexible to restaurant needs.

- Mandani Bay, Ouano Avenue, Mandaue City, Cebu
