About the role
We are seeking an experienced Sous Chef to join our talented culinary team at Moderna , a new fine dining concept od Al Dente Food Group located in the heart of Bonifacio Global City, Taguig City, Metro Manila. As Sous Chef, you will play a pivotal role in supporting the Head Chef in managing all kitchen operations and ensuring the delivery of exceptional dining experiences for our guests. This is a full-time position.
What you'll be doing
- Assist the Head Chef in leading and directing the kitchen brigade to deliver consistent, high-quality food in a timely manner
- Collaborate with the Head Chef to develop and refine innovative menu items that showcase your culinary expertise and creativity
- Oversee the efficient and organized execution of all food preparation and presentation
- Monitor food quality, portion control, and kitchen sanitation to ensure adherence to safety and hygiene standards
- Train and mentor junior chefs, fostering a positive and collaborative kitchen environment
- Assist in inventory management and cost control to optimise operational efficiency
- Stay informed of industry trends and best practices to continuously enhance the restaurant's culinary offerings
What we're looking for
- Minimum of 5 years' experience as a Sous Chef or in a similar leadership role within a reputable fine dining restaurant
- Extensive knowledge of Italian and Filipino cuisine and a passion for creating authentic, flavourful dishes
- Strong technical culinary skills, including expertise in food preparation, presentation, and menu development
- Excellent time management, multitasking, and problem-solving abilities to thrive in a fast-paced environment
- Effective leadership and mentoring skills to inspire and develop your team
- Commitment to maintaining the highest standards of food safety and hygiene
- Ability to work collaboratively with the front-of-house team to ensure seamless service delivery
