Job Summary
Grem's Deli is looking for a Commissary Cook Team Leader who will supervise and coordinate commissary kitchen operations. This role ensures food preparation meets company standards, production schedules are followed, and staff perform efficiently while maintaining quality and food safety. The Team Leader will oversee commissary cooks, enforce sanitation guidelines, and support centralized food production.
Key Responsibilities
1. Supervision and Operations
- Lead and supervise commissary cooks and staff to ensure smooth workflow.
- Assign tasks, monitor performance, and enforce production schedules.
- Ensure kitchen efficiency and adherence to company standards.
2. Food Preparation and Quality Control
- Oversee cooking and food preparation based on standardized recipes.
- Monitor food quality, consistency, and presentation.
- Ensure safe and correct use of kitchen equipment.
3. Compliance and Safety
- Enforce food safety and sanitation standards (DOH, FDA, HACCP).
- Ensure proper labeling, storage, and handling of ingredients and products.
- Maintain a safe, clean, and hygienic commissary environment.
4. Inventory and Reporting
- Assist in inventory monitoring and stock rotation (FIFO).
- Submit reports on production, quality concerns, and supply issues.
- Coordinate with management on supplies and equipment needs.
5. Training and Team Development
- Train and guide commissary staff in food prep and kitchen practices.
- Motivate the team to maintain productivity and high-quality output.
- Support management in implementing new processes and standards.
Qualifications
- At least Senior High School Graduate; NCII in Commercial Cooking or related certification required. Culinary/HRM graduate is an advantage.
- Minimum of 2–3 years' kitchen experience, with at least 1 year in a supervisory/leadership role.
- Strong leadership, organizational and time management skills.
