THE AFFILIATE COMPANY:

As part of our commitment to excellence, we are looking for a detail-oriented Accounting Supervisor to lead our day-to-day accounting operations and support our financial growth.

Key Responsibilities

1. Production Baking & Recipe Execution - producing the entire range of the cafe's baked goods consistently and to a high standard.

2. Following Recipes Precisely - Measuring ingredients and following formulas with extreme accuracy to ensure consistency in flavor, texture, and appearance every single day.

3. Operating Equipment - Skillfully using commercial baking equipment such as mixers, dough sheeters, proofers, deck ovens, convection ovens, and pastry bags.
4. Mastering Techniques - Executing various techniques like laminating dough for croissants, tempering chocolate, fermenting sourdough, and creating intricate pastry decorations.

5. Scaling Recipes - Accurately increasing or decreasing recipe yields based on daily sales

6. Prepping Ingredients & Mise en Place – "Mise en Place" (French for everything in it's place). A huge part of a baker's shift is dedicated to preparation before the actual baking can begin.

7. Scaling Ingredients - Weighing and preparing all ingredients (flours, sugars, fats, liquids, inclusions like chocolate chips or fruit) for the day's batches.

8. Creating Foundations - Preparing doughs that require long fermentation (e.g., sourdough levain, brioche, croissant dough) or pre-making fillings, glazes, and creams (e.g., pastry cream, ganache, fruit compotes).

9. Shaping and Panning - Portioning, shaping, and placing doughs into pans or on sheets for their final proof before baking (e.g., shaping baguettes, filling muffin tins, rolling cookie balls)

10. Quality Control & Consistency

11. Monitoring Baking Process - Carefully watching bake times and temperatures, rotating pans for even browning, and using visual and sensory cues (color, smell) to determine doneness.

12. Inspecting Finished Products - Evaluating the final product against quality standards for crust, crumb, height, flavor, and appearance.
13. Tasting and Adjusting - Regularly tasting products to ensure consistency and making minor adjustments to recipes or processes as needed (e.g., adjusting for humidity's effect on dough).

14. Maintaining Standards - Ensuring every item that goes to the display case is perfect and meets the cafe's reputation for quality.

15. Inventory Management & Ordering Support - The baker plays a key role in managing the specific inventory for the bakery program.

16. Monitoring Baking Supplies - Tracking stock levels of flours, yeasts, spices, chocolate, paper liners, and other baking-specific ingredients.

17. Communicating Needs - Providing detailed lists of needed ingredients and supplies to the Purchasing Officer or manager to ensure nothing runs out.
18. Rotating Stock - Practicing the FIFO (First-In, First-Out) method to use older ingredients before newer ones, reducing waste and ensuring freshness.

19. Waste Tracking - Recording and minimizing waste from failed batches or unsold products to help control food costs.

20. Kitchen Maintenance & Sanitation - A bakery must be impeccably clean. This is a daily, non-negotiable responsibility.

21. Cleaning Equipment - Disassembling, cleaning, and sanitizing all mixers, proofers, ovens, and work surfaces after each use to meet health codes and prevent cross-contamination (especially with allergens like nuts).

22. Organizing Workspace - Maintaining a clean, organized, and efficient workstation throughout the shift.
23. Following Safety Protocols - Adhering to all food safety standards, including proper personal hygiene, safe food handling, and correct storage of ingredients.

Qualifications

• F&B Course, Culinary (Baking) Courses, Pastry Baking Specialized Courses
• Fresh Graduate of related course or with at least 6 mos – 1 yr related experience
• Good Baking skills, Skilled in operating and using Baking equipment
• Diligent, disciplined, healthy or well body condition, honest, passionate

Starting Salary

P13,600/month subject to increase upon regularization, depending on performance and Management approval.
