Join a dynamic team of culinary professionals as an Executive Pastry Chef.

Job Summary: We are seeking a highly skilled and experienced pastry chef to lead our pastry team in creating exceptional desserts and pastries that exceed guest expectations.

  • Responsibilities:
  • Supervise and participate in the preparation of all baked food such as pastries and desserts in accordance with established recipe cards and methods.
  • Ensure that all kitchen departments receive their requirements of baked items, pastries, and desserts.
  • Conduct regular quality checks on baked items, pastries, and desserts to ensure they are visually attractive and meet taste standards.
  • Prepare decorative centerpieces for outlets and banquets.
  • Implement portion control policies and standard plating instructions.
  • Conduct market analysis and follow customer satisfaction surveys to develop and improve department service delivery.
  • Keep up-to-date standard recipe files for all baked, pastry, and sweet items.
  • Familiarize yourself with hotel safety procedures, including fire procedures, first aid, health and safety policy, hotel security procedures, and product knowledge.
  • Ensure proper handling and maintenance of pastry equipment and utensils.
  • Check daily function sheets and menus to ensure production levels are met.
  • Maintain Dusit Hygiene and Sanitation Standards in the section at all times.
  • Assist the Executive Chef in preparing department budgets and goals.
  • Work closely with F&B Directors and Chefs to discuss special promotions and participate in menu planning.
  • Attend scheduled meetings, including training coordinators meetings, and assist the Executive Chef in maintaining high guest satisfaction ratings.
  • Conduct interviews, hiring, employee orientation, performance appraisals, coaching, counseling, and suspensions as necessary.
  • Develop formal training plans and conduct on-the-job learning events for pastry kitchen employees.
  • Conduct monthly communication meetings for all pastry kitchen employees.
Required Skills and Qualifications
  • Graduation from a well-known culinary institution is highly desirable.
  • Minimum 8-10 years of experience in pastry cooking, preferably in a 5-star environment.
  • Solid track record and proven creativity.
  • Full HACCP awareness.
  • Solid managerial experience and knowledge in kitchen operations, including management of people, complex problems, food and beverage management, and food sanitation.
  • Excellent English communication skills in both written and spoken forms.
  • Possesses professional disposition with excellent communication and interpersonal skills.
