Job Overview

We are seeking a highly skilled Culinary Leader to oversee the culinary operations of our esteemed establishment.

Key Responsibilities
  • Prepare and ensure high-quality food, with a focus on presentation and taste.
  • Source and maintain top-quality produce, and train staff accordingly.
  • Collaborate with senior chefs in menu planning, inventory management, and supply chain control.
  • Maintain kitchen safety and hygiene standards, and enforce sanitation rules.
  • Supervise food preparation, ensuring consistency and quality.
  • Coordinate orders with line cooks, promoting teamwork and timely delivery.
  • Communicate effectively with kitchens regarding menu changes, ingredients, and special diets.
  • Optimize stock levels, recipes, and waste control procedures to minimize costs.
  • Aid in maintaining cleanliness and organization in kitchens and food storage areas.
  • Assess ongoing training needs of staff and provide feedback on weekly menu updates.
  • Familiarize yourself with hotel emergency procedures.
  • Conduct interviews, hiring, orientation, performance appraisal, coaching, counseling, and suspension as needed.
  • Lead daily briefings and debriefings in the absence of the Executive Chef.
Reporting Structure
  • Reports directly to the Executive Chef.
  • Supervises the entire kitchen staff, including line cooks, prep cooks, and dishwashers.
  • Coordinates with other managers for all hotel activities.
Requirements
  • At least 2 years of culinary leadership experience in a luxury establishment.
  • Strong knowledge in specific cuisines (French, Italian, Chinese, Thai).
  • Familiarity with HACCP principles.
  • Proven track record of cost optimization and menu planning expertise.
