LMNOP COFFEE — KITCHEN STAFF / COOK

1. Food Preparation

  • Prepare ingredients daily (washing, chopping, slicing, portioning).
  • Assemble café menu items such as sandwiches, toasts, salads, breakfast bowls, and light hot dishes.
  • Follow LMNOP's standardized recipes for consistency.
  • Assist in preparing sauces, dressings, spreads, and garnishes.

2. Cooking & Assembly

  • Cook menu items using proper technique and timing (pan, oven, grill, toaster).
  • Ensure all food served meets LMNOP's quality, taste, and presentation standards.
  • Warm pastries, breads, and baked items properly before serving.
  • Plate dishes neatly with attention to LMNOP's clean, minimal aesthetic.

3. Station Setup (Mise en Place)

  • Set up the workstation before opening: ingredients, utensils, tools, and equipment.
  • Keep station organized, clean, and fully stocked.
  • Refill ingredients during service to avoid delays.
  • Follow FIFO for labeling and storing ingredients.

4. Cleanliness, Sanitation & Dishwashing

  • Maintain cleanliness of all surfaces, tools, containers, and kitchen equipment throughout the shift.
  • Wash dishes, utensils, chopping boards, pans, and kitchen tools consistently during service to keep the kitchen running smoothly.
  • Ensure plates and serving ware are clean, sanitized, and ready for use.
  • Follow DOH food safety and sanitation standards at all times.
  • Dispose of waste properly and ensure the kitchen is clean during and after service.

5. Inventory & Stock Management

  • Notify supervisor when ingredients or supplies are running low.
  • Assist in receiving and checking deliveries.
  • Organize stock in chiller, freezer, and dry storage.
  • Label, date, and rotate items properly.

6. Team Collaboration

  • Communicate clearly and respectfully with baristas and servers for smooth service flow.
  • Check order tickets promptly and prepare items in a timely manner.
  • Support baristas with small tasks during peak hours when possible.
  • Work as one team—maintain LMNOP's warm and efficient service atmosphere.

7. Equipment Handling

  • Operate kitchen equipment safely (toaster, oven, stove, griller, blender).
  • Ensure equipment is cleaned after use and report malfunctions immediately
