Job Summary:

The Commissary Manager oversees the day-to-day operations of the commissary, ensuring efficient food production, inventory management, and distribution to all store locations. This role is responsible for maintaining food quality, cost control, and compliance with safety and sanitation standards, while leading the commissary team to achieve operational excellence.

Key Responsibilities:

Operations Management

  • Oversee daily commissary production and distribution to branches/outlets.
  • Ensure all food products are prepared according to standard recipes and quality specifications.
  • Coordinate with store managers and operations to fulfill daily/weekly production requirements.
  • Develop and implement systems for efficient workflow and production scheduling.

Inventory & Cost Control

  • Monitor and manage inventory levels of raw materials, packaging, and finished goods.
  • Conduct regular stock audits and ensure accurate documentation.
  • Implement cost control measures to minimize waste and maximize efficiency.
  • Coordinate with purchasing for timely procurement of supplies.

Team Leadership

  • Supervise commissary staff including cooks, production assistants, and warehouse staff.
  • Provide training, coaching, and performance evaluation to the team.
  • Schedule staff shifts and manage labor costs effectively.

Quality Assurance & Compliance

  • Ensure compliance with food safety, sanitation, and workplace safety standards.
  • Conduct regular inspections and audits to maintain high-quality output.
  • Implement continuous improvement initiatives for production and service.

Reporting & Coordination

  • Prepare and submit daily/weekly reports on production, inventory, and cost performance.
  • Work closely with operations, purchasing, and logistics to support business needs.
  • Recommend process improvements, new equipment, and resource allocation.

Qualifications:

  • Bachelor's degree in Hotel & Restaurant Management, Culinary Arts, Business Management, or related field (preferred).
  • At least 3–5 years of experience in commissary/central kitchen, food production, or restaurant operations.
  • Strong knowledge of food safety standards (HACCP, DOH regulations, etc.).
  • Excellent leadership, organizational, and problem-solving skills.
  • Proficient in inventory management and production scheduling.
  • Strong communication and coordination abilities.

Job Type: Full-time

Pay: Php25, Php30,000.00 per month
