Job Summary

We are looking for a highly organized, experienced, and passionate Head of Kitchen to lead our commissary team. This role is responsible for overseeing all kitchen operations, ensuring food is produced efficiently, safely, and to high quality standards. The ideal candidate will manage staff, production schedules, inventory, and kitchen systems to support multiple outlets or clients.

Key Responsibilities
Kitchen Operations
  • Plan and oversee the daily production schedule to meet outlet demands and delivery timelines.

  • Supervise preparation, cooking, packaging, and dispatch of food products.

  • Ensure adherence to standardized recipes and portion controls for consistency.

  • Maintain the highest standards of food hygiene, safety, and sanitation.

  • Optimize kitchen workflow for efficiency and productivity.

Team Management
  • Lead, train, and motivate kitchen staff to maintain performance and quality standards.

  • Develop work schedules, assign tasks, and ensure coverage during peak times.

  • Conduct regular staff evaluations and enforce kitchen rules and SOPs.

  • Handle conflict resolution and promote a positive team culture.

Quality & Compliance
  • Conduct regular quality checks on raw materials, production, and final products.

  • Ensure compliance with local food safety regulations and company policies.

  • Manage and oversee kitchen audits (internal and external).

Inventory & Cost Control
  • Monitor usage and waste to control food costs and minimize loss.

  • Ensure correct inventory levels and coordinate with purchasing on stock needs.

  • Track daily production yields and update management with reports.

Requirements
  • Minimum 5 years' experience in a high-volume kitchen or commissary, with at least 2 years in a leadership role.

  • Culinary degree or relevant training preferred.

  • Strong knowledge of food safety, HACCP, and commercial kitchen operations.

  • Excellent leadership, organizational, and communication skills.

  • Able to work early mornings, weekends, or extended hours when needed.

  • Proficient in using kitchen equipment and basic inventory or production software.
