
Director of Commissary Operations

The Director of Commissary Operations will be responsible for managing the full spectrum of commissary activities specializing in baked goods such as cakes, pastries, and premium desserts. This role ensures seamless production processes, consistent product excellence, efficient inventory management, and strict compliance with food safety regulations. The position is instrumental in scaling output, leading a high-performing baking team, and guaranteeing timely distribution to branches, events, and external clients
Key Responsibilities:
Production & Baking Oversight
- Direct daily production of bakery products, maintaining strict adherence to standardized recipes, portion controls, and presentation guidelines.
- Supervise baking schedules to meet demand for branches, events, and custom orders.
- Oversee processes such as proofing, baking, decorating, chilling, and packaging to maintain product consistency.
- Collaborate with R&D/Product Development for seasonal offerings and new product launches.
Team & Workforce Leadership
- Lead bakers, decorators, packers, and support staff to ensure smooth commissary operations.
- Organize staff schedules and rotations to match production peaks.
- Provide training on baking standards, safety, and sanitation practices.
- Build a culture of collaboration, accountability, and continuous improvement.
Quality Assurance & Food Safety
- Uphold company standards for taste, texture, aesthetics, and shelf life of products.
- Implement and monitor compliance with HACCP, GMP, and sanitation protocols.
- Conduct internal audits and oversee temperature monitoring of freezers, chillers, and ovens.
- Ensure allergen information, labeling, and packaging integrity are strictly followed.
Inventory & Cost Management
- Oversee inventory of raw materials to ensure optimal stock levels without overages.
- Work closely with procurement for supplier coordination and timely purchasing.
- Track ingredient usage and wastage, implementing cost-control measures.
- Validate production forecasts and align them with projected sales demand.
Order Fulfillment & Distribution
- Guarantee accurate and timely preparation and dispatch of goods for branches and clients.
- Coordinate with logistics for delivery routes, schedules, and vehicle readiness.
- Troubleshoot delivery issues, product discrepancies, or damages.
Facility & Equipment Oversight
- Maintain commissary cleanliness and ensure all equipment is in proper working order.
- Oversee preventive maintenance and schedule repairs to prevent downtime.
- Ensure compliance with local health codes and readiness for inspections.
Qualifications:
- Bachelor's degree in Food Technology, Culinary Arts, Pastry & Bakery Management, Business Administration, or a related field (preferred).
- At least 5 years of experience in large-scale bakery or commissary operations, with 2 years in a leadership capacity.
- Strong technical expertise in baking, pastry decoration, freezing/chilling processes, and packaging.
- Background in multi-branch food service operations or high-volume production preferred.
- Knowledgeable in food safety standards (HACCP, GMP) and inventory/production systems.
- Excellent leadership, organizational, and communication skills.
- Keen eye for detail with a commitment to quality and operational efficiency.
