Primary Objective of Position

The Dimsum and Wok Chef is responsible for the preparation, cooking, and

presentation of authentic Chinese dimsum and wok-style dishes for Balesin Pines

Hotel's Outlet dining operations. This role combines technical skill, creativity, and

efficiency to deliver exceptional Asian cuisine that enhances the hotel's reputation for

world-class dining experiences.

Essential Functions

-Prepares, cooks, and presents a variety of dimsum dishes

(steamed, fried, baked, etc.) and wok-style dishes (stir-fried,

sauced, or noodle-based) with consistency and high quality.

-Ensures dishes are prepared according to established

recipes, presentation standards, and portion guidelines.

-Supervises daily operations in the dimsum and wok sections

during banquet events, ensuring timely preparation and

smooth kitchen flow.

-Collaborates with the Head Chef to design, update, and

innovate menus for banquets and restaurant service.

-Maintains high standards of food hygiene, safety, and

sanitation in compliance with hotel and local regulations.

-Manages kitchen stock levels, monitor ingredient quality, and

control food cost and wastage.

-Trains, guides, and evaluates junior kitchen staff on proper

dimsum and wok cooking techniques.

-Coordinates closely with banquet and service teams to

ensure smooth execution of events and guest satisfaction.

-Participates in menu tastings, culinary showcases, and hotel

promotions as required.

Essential Skills

-Excellent knife skills, timing, and attention to flavor balance

Knowledge of food safety, kitchen sanitation, and HACCP

standards

Requirements

-Minimum 3–5 years of experience as a Dimsum Chef, Wok

Chef, or Chinese Cuisine Chef in a hotel, resort, or upscale

restaurant.

-Strong expertise in traditional and modern dimsum

preparation and high-heat wok cooking techniques.

-Culinary degree or equivalent training is an advantage.

-Flexibility to work evenings, weekends, and holidays.

-Must be comfortable working under pressure.
