COMMISSARY TEAM LEADER

Department: Commissary Team Leader

Reports To: Chief Operating Officer

Location: Head Commissary

JOB DESCRIPTION

The Commissary Team Leader is responsible for overseeing the day-to-day operations of the commissary to ensure efficient production, high product quality, and strict compliance with food safety and operational standards. This role supervises staff, coordinates production schedules, monitors orders and deliveries, manages inventory, and ensures that all finished goods are prepared, packed, and dispatched on time to meet the needs of all branches and customers. The Commissary Team Leader acts as the key link between commissary operations, logistics, and management, ensuring smooth workflow, cost efficiency, and operational excellence.

KEY RESPONSIBILITIES

Operations Oversight

  • Supervise daily commissary production to ensure timely preparation, quality standards, and compliance with recipes.
  • Oversee receiving, storage, and dispatch of raw materials and finished products, ensuring proper handling and food safety compliance.
  • Coordinate with Purchasing and Logistics to maintain optimal inventory levels.

Team Management

  • Lead and motivate commissary staff, ensuring adherence to schedules, productivity targets, and safety protocols.
  • Conduct training for new and existing staff on production procedures, hygiene standards, and equipment usage.
  • Monitor performance, provide feedback, and recommend disciplinary or commendation actions when necessary.

Quality and Compliance

  • Implement and monitor strict quality control measures in all stages of production.
  • Ensure compliance with company policies, food safety regulations, and sanitation guidelines (e.g., HACCP standards).
  • Maintain updated records for production output, quality checks, and sanitation inspections.

Production Planning and Reporting

  • Prepare daily and weekly production schedules based on branch and customer orders.
  • Monitor raw material usage to minimize waste and control production costs.
  • Submit daily, weekly, and monthly reports to the Commissary Manager or Operations Head.

Equipment and Facility Maintenance

  • Ensure proper use, cleaning, and preventive maintenance of all commissary equipment.
  • Report equipment issues immediately and coordinate necessary repairs.
