In Vancouver, The Lunch Lady holds a Bib Gourmand designation from the Michelin Guide for offering excellent food at good value.

We're seeking a talented Sous Chef to join our kitchen leadership team. You will support the Head Chef in daily kitchen operations, ensuring fast, high-quality production, mentoring staff, maintaining high standards, and helping translate authentic Vietnamese flavours into a modern dining experience.

RESPONSIBILITIES

  • Assist the Head Chef in organizing and supervising kitchen operations, especially during service (lunch & dinner)
  • Oversee station setup, food prep, and ensure speed and consistency under pressure
  • Ensure all dishes are presented with high quality and according to recipe / bar standards
  • Help enforce food safety, sanitation, and HACCP / relevant standards
  • Train line cooks, prep cooks, and prep team; help in schedule and performance reviews
  • Maintain inventory, assist in ordering, manage waste, cost control
  • Collaborate with Head Chef on menu planning and specials, keeping authenticity of Vietnamese flavours while adapting to local ingredients

QUALIFICATIONS

  • Prior experience in fast-paced restaurant or volume service (casual/vietnamese or similar cuisine preferred)
  • Able to communicate clearly — excellent communication skills and leadership ability
  • Strong organizational skills, calm under service pressure
  • Solid knowledge of Vietnamese cuisine is a plus; willingness to learn authenticity and heritage recipes
  • Experience with food safety standards and kitchen hygiene
  • Availability to work flexible shifts, weekends, holidays
