The BOH Shift Supervisor – Sushi is responsible for overseeing the sushi kitchen operations during assigned shifts, ensuring consistency, quality, and efficiency in food preparation.

JOB SCOPE:

  • Prepare sushi dishes according to restaurant standards, maintaining authenticity and presentation quality.
  • Make traditional Japanese sushi rice, and expertly chop, slice, and fillet various types of fish and seafood.
  • Customize sushi orders based on guest preferences, dietary restrictions, and food allergies.
  • Inspect ingredients (fish, fruits, vegetables, etc.) to ensure freshness and adherence to quality standards.
  • Oversee day-to-day sushi kitchen operations and assign tasks to BOH staff during shifts.
  • Monitor food preparation and service times to ensure smooth kitchen flow and timely order delivery.
  • Conduct regular inventory checks of food supplies, ingredients, and materials.
  • Maintain cleanliness and organization of workstations, equipment, and storage areas to prevent cross-contamination.
  • Implement and enforce health, safety, and sanitation regulations.
  • Train, mentor, and guide BOH staff to uphold quality and efficiency standards.
  • Record shift performance, report kitchen issues, and provide feedback to management for process improvement.

QUALIFICATIONS:

  • At least 2 years of experience as a Sushi Chef or in a similar supervisory kitchen role.
  • Proficiency in sashimi and maki preparation with strong knife and plating skills.
  • Knowledgeable in People Management, Shift Management, and Inventory Management.
  • Strong understanding of food safety and hygiene standards.
  • Proficient in Microsoft Office applications (Word, Excel, etc.) for reporting and inventory tracking.
  • Excellent communication and leadership skills, with the ability to work in a fast-paced environment.
  • Flexible, dependable, and able to work extended hours or shifts as needed.

Job Types: Full-time, Permanent

Pay: Php33, Php38,000.00 per month
