Job Title: Culinary Operations Manager
Shangri-La The Fort, Manila is a 60-storey high-rise building located within Fort Bonifacio, a former military base and city centre. The complex features 576 hotel guestrooms and 97 hotel residences, along with 98 exclusive Horizon Homes.
The property is situated along 5th Avenue and 30th Street in the new, fast-developing Taguig business district. It is a 30-minute drive from Ninoy Aquino International Airport and close to the Manila Golf Club and Manila Polo Club.
Job Summary:The Culinary Operations Manager is responsible for the administration, operation, inter-departmental relations, communication, cost control, hygiene, cleanliness, quality standards, supervision, manning, staffing, training, and employee relations. He/she must implement all standardized procedures, rules, and regulations systematically to align with hotel standards and policies.
Duties:- Develop daily menus that meet the highest quality standards.
- Ensure the quality of food and beverages provided meets the highest standards.
- Supervise the daily operation of the kitchen.
- Plan yearly theme events and activities.
- Maintain the branding and quality of every meal.
- Optimize profitability.
- Support the Executive Chef in daily operations and kitchen management.
- Preferably a college graduate with a degree in Culinary Arts or a similar field.
- At least 5 years of experience in a 5-star hotel, multi-restaurant environment with proven concepts.
- A passion for Food & Beverage.
- Fluent communication skills in English and local language.
- Management experience would be advantageous.
- Awareness of latest market trends and industry updates.
- Enjoys being challenged.
