Job Description

PRIMARY RESPONSIBILITIES:

  • Responsible for preparing all dishes in their section.
  • Monitor food quality, presentation, and safety standards.
  • Properly store, label, and use all food supplies to prevent spoilage and control costs.
  • Maintain sanitation standards, cleanliness, and ambiance in the kitchen, including controlling temperature and ventilation.
  • Prepare mise-en-place for each shift.
  • Follow control systems to ensure quality and portion consistency.
  • Supervise and direct chefs in their section, ensuring health and hygiene standards, and troubleshoot issues.
  • Ensure proper storage of food items at shift end.
  • Minimize food costs by adhering to standards.
  • Assist in menu planning, inventory control, scheduling, and ordering supplies.
  • Familiarize with hotel fire, first aid, health & safety, security procedures, and hotel product knowledge.
  • Organize and set up kitchen sections for efficiency.
  • Maintain kitchen equipment to standard, minimizing breakage.
  • Carry out orders from the Sous Chef and Chef de Cuisine.
  • Delegate duties to kitchen staff.
  • Work with the Sous Chef to ensure smooth kitchen operations.
  • Create daily market lists for produce purchases.
  • Report accidents immediately.
  • Attend daily briefings and meetings.
  • Participate in recruiting, hiring, training, and evaluating staff under supervision.
  • Provide additional training as needed.
  • Perform other tasks as assigned.

Report Line & Communication:

  • Assist in ensuring culinary standards comply with hotel policies and standards.
  • Maintain good relationships with colleagues and other departments.

Others:

  • Engage in continuous learning through own IDP.
  • Perform any additional duties assigned.

  • Represent the hotel's brand and values, delivering exceptional guest experiences and promoting Thai graciousness.

  • Maintain confidentiality of all proprietary information and adhere to hotel policies regarding data security.

Job Requirements:

  • At least 2 years of Chef de Partie experience in a 5-star hotel.
  • Strong knowledge of culinary skills and functions.
  • Solid understanding of HACCP.
  • Proven track record in cost control across food, equipment, labor, and waste.
  • Passion for menu planning and leadership.
