Be responsible for the preparation of all dishes in your assigned section.

Monitor food quality, presentation and safety standards.

Ensure proper storage, labeling and use of all food supplies.

Maintain sanitation standards in the assigned areas.

Prepare mis-en-place for each shift's needs.

Follow control systems to ensure quality and portion consistency.

Direct chefs in their section in preparing, cooking, and presenting culinary dishes.

Enforce strict health and hygiene standards in the kitchen.

Trouble-shoot any problems that may arise.

Supervise and ensure food items are properly stored at the end of the shift.

Minimize food costs by adhering to standards.

Assist with menu planning, inventory control, scheduling, ordering of kitchen supplies.

Understand HACCP procedures.

Organize and set up the assigned section of the satellite kitchen as efficiently as possible.

Ensure operating and kitchen equipment is well maintained.

Delegate duties to chefs working in their section of the kitchen.

Work closely with the Sous Chef to ensure a smooth operation.

Required Skills and Qualifications">
  • At least 2 years of experience as a Chef de Partie in a 5 star hotel

Knowledgeable about specialty and culinary functions in general.

Understanding of food cost control including food, equipment, labor and waste.

Proven track record of cost control.

Demonstrate passion for menu planning and leadership.
