Job Title: Chef de Cuisine – Italian Cuisine

Location: Makati, Metro Manila (with monthly rotation to El Nido, Palawan)

Salary: PHP 215,000/month + service charge

About the Role:

We are looking for a highly skilled and passionate Chef de Cuisine specializing in Italian cuisine to lead the culinary operations of our new upscale Italian restaurant located in the heart of Makati, Metro Manila. This position offers a unique and exciting opportunity to work in two of the Philippines' most vibrant destinations: the bustling city of Makati and the stunning beachfront of El Nido, Palawan.

The successful candidate will divide their time between both locations, spending three weeks per month in Makati and one week per month in El Nido, overseeing the kitchen operations in each.

Key Responsibilities:

  • Menu Development: Design and implement menus that highlight authentic Italian flavors with modern, creative twists, ensuring consistency across both locations.
  • Kitchen Leadership: Oversee day-to-day kitchen operations, including food preparation, plating, and presentation, maintaining the highest culinary standards.
  • Team Management: Lead, train, and inspire kitchen teams in both Makati and El Nido to deliver exceptional dining experiences.
  • Quality Assurance: Monitor food quality, consistency, and presentation to meet brand and guest expectations.
  • Inventory & Cost Control: Manage food inventory, supplier orders, and cost control measures efficiently across both kitchens.
  • Innovation & Trends: Stay current with culinary trends and continuously introduce fresh ideas to the menu.

Rotation Schedule:

  • Makati: 3 weeks per month at the new Italian restaurant.
  • El Nido: 1 week per month at our established beachfront Italian restaurant.

Qualifications:

  • Formal culinary education or equivalent training in Italian cuisine.
  • Minimum of 5 years' experience as a Chef de Cuisine or Senior Sous Chef in a reputable Italian kitchen.
  • Proven leadership and kitchen management skills.
  • Creative, with a deep passion for Italian cuisine and culinary innovation.
  • Fluent in English (Italian language is a plus).
  • Flexible and adaptable to different environments and team cultures.
