Cost Controller for BE Resorts Mactan in Punta Engaño, Lapu-Lapu City

PURPOSE

DUTIES AND RESPONSIBILITIES

  1. Ensures that goods and supplies are properly received, stored, and issued.

  2. Review and approve Purchase Requisition and Store requests.

  3. Ensures the quality and quantity of goods purchased as per PO.

  4. Ensures the sufficiency and availability of goods and supplies.

  5. Check and monitor breakfast and banquet production report.

  6. Prepare banquet revenue and expense report.

  7. Spot checks the kitchen during preparation and actual food disposal.

  8. Spot inventory on outlet and kitchen.

  9. Check expiry dates of inventoriable items.

  10. Review spoilage and breakages report.

  11. Does recipe costing for each menu items so as to determine its potential cost and able to come up with a suggested selling price depending on management's discretion of the ceiling budget or markup cost.

  12. Update tracker from purchase request, purchase order and receiving report for monitoring purposes.

  13. Prepares Monthly Inventory Report.

  14. Prepares monthly food and beverage cost and general expenses and recommend alternatives to improve cost.

  15. Reports any irregular activity among kitchen staff.

  16. Perform other related duties as may be assigned by the superior.

PURPOSE

The Cost Controller is responsible for controlling the costs of hotel purchases. This role includes planning, monitoring, controlling, and forecasting the hotel's budget.
