Position Summary

The Commissary Supervisor is responsible for overseeing all daily operations of the central commissary kitchen. This includes managing staff, ensuring food quality and safety standards are met, and optimizing production and distribution to all Hooray Chicken branches. The ideal candidate will have strong leadership skills, a deep understanding of kitchen operations, and a commitment to maintaining a clean and efficient workspace.

Key Responsibilities

  • Production Management: Supervise the daily preparation, cooking, and packaging of all food items, including signature fried chicken, sauces, and sides, to meet the demands of all Hooray Chicken branches.
  • Quality Control & Food Safety: Implement and enforce strict HACCP (Hazard Analysis and Critical Control Points) and Good Manufacturing Practices (GMP) protocols. Conduct regular inspections to ensure all food items meet the company's high quality and safety standards.
  • Inventory & Logistics: Manage raw material and finished product inventory. Coordinate with suppliers to ensure a steady supply of ingredients. Oversee the scheduling of deliveries to all branches to ensure timely and complete orders.
  • Team Leadership: Lead, train, and mentor a team of commissary staff. Create work schedules, delegate tasks, and conduct performance reviews. Foster a positive and productive work environment.
  • Equipment & Maintenance: Ensure all kitchen equipment is in good working order. Schedule regular cleaning and maintenance to prevent breakdowns and maintain a sanitary environment.
  • Reporting: Prepare daily and weekly reports on production output, waste, and inventory levels.

Qualifications

  • Education: A Bachelor's degree in Culinary Arts, Food Technology, or a related field is preferred.
  • Experience: At least 2-3 years of experience in a supervisory role within a commissary, central kitchen, or large-scale food production facility.
  • Skills:
  • Strong knowledge of food safety regulations and practices (e.g., HACCP, GMP).
  • Excellent leadership, communication, and organizational skills.
  • Proficiency in inventory management and production planning.
  • Ability to work in a fast-paced and demanding environment.
  • Familiarity with various kitchen equipment.
  • Problem-solving and decision-making abilities.

Job Types: Full-time, Permanent

Pay: Php25, Php30,000.00 per month
