PRIMARY JOB DESCRIPTION:

Handles cold kitchen prep such as salads, garnishes, dressings, and cold dishes. Supports Line Cooks by preparing ingredients, batching items, and ensuring all mise en place is ready for service. Helps maintain kitchen cleanliness, organization, and efficiency.

Key Responsibilities:

  • Prepare salads, cold dishes, and plating components
  • Portion, slice, and prep vegetables, fruits, proteins, and garnishes
  • Batch cold sauces, dressings, marinades, and similar items

General Prep & Batching Support:

  • Assist with batching stocks, sauces, and base preparations as needed
  • Replenish ingredients for Line Cooks during service
  • Perform basic prep work under guidance of senior kitchen staff

Station Management:

  • Maintain a clean, organized, and food-safe cold kitchen area
  • Label, store, and rotate ingredients properly (FIFO)
  • Follow kitchen hygiene, sanitation, and safety standards

Inventory & Equipment Care:

  • Report low stock levels to the Line Cook or Sous Chef
  • Help track prep items and usage levels
  • Use prep tools and equipment safely; report any issues

QUALIFICATIONS:

  • 0–1 year kitchen experience (trainees welcome)
  • Basic food prep and food safety knowledge
  • Organized, detail-oriented, and willing to learn
  • Able to work in a fast-paced kitchen
  • Good teamwork and communication skills
