POSITION SUMMARY
The Meat Process Supervisor oversees the daily operations of meat processing in the commissary facility, ensuring that all meat products are prepared, processed, and packaged according to company standards. This role involves supervising the meat processing team, enforcing food safety and sanitation regulations, monitoring production quality, and optimizing workflows for maximum efficiency. The Meat Process Supervisor plays a critical role in achieving production goals, managing inventory, and maintaining compliance with safety and quality standards.
DUTIES AND RESPONSIBILITIES
A. Supervision of Meat Processing Operations:
a. Oversee all stages of meat processing, including thawing, cutting, grinding, marinating, portioning, and packaging to meet production goals.
b. Assign tasks, monitor team performance, and ensure that production schedules and deadlines are met consistently.
c. Collaborate with the Production Manager to adjust daily production targets as needed based on demand and inventory levels.
B. Quality Control and Standards Compliance:
a. Ensure that all meat products meet established quality standards, including weight, appearance, texture, and flavor consistency.
b. Conduct regular inspections of processed products, ensuring compliance with portion control, recipe specifications, and customer requirements.
c. Identify quality issues promptly and implement corrective actions to maintain consistent product standards.
C. Team Training and Development:
a. Train and guide team members on proper meat processing techniques, equipment handling, and safety protocols.
b. Provide continuous feedback and coaching to improve team skills and adherence to standard operating procedures (SOPs).
c. Conduct regular performance evaluations and address any skill gaps or compliance issues with corrective actions.
D. Safety and Sanitation Compliance:
a. Enforce strict adherence to food safety regulations, including HACCP, GMP, and sanitation protocols to prevent contamination.
b. Conduct routine inspections of the processing area to ensure cleanliness, equipment maintenance, and compliance with hygiene standards.
c. Ensure all team members follow personal protective equipment (PPE) guidelines and maintain safe handling practices.
E. Equipment Operation and Maintenance:
a. Oversee the operation of processing equipment, including grinders, slicers, mixers, and packaging machines, ensuring safe and efficient use.
b. Coordinate with the Maintenance Technician to perform routine maintenance and report any equipment malfunctions to prevent production delays.
c. Train team members in proper equipment handling, storage, and cleaning practices to maximize equipment lifespan.
F. Inventory and Waste Management:
a. Monitor inventory of raw meat, spices, packaging materials, and other processing supplies, coordinating with the inventory team to avoid shortages.
b. Implement portion control and trimming techniques to minimize meat waste, tracking waste data to support cost reduction initiatives.
c. Ensure accurate labeling, dating, and storage of processed meat products to maintain freshness and reduce spoilage.
G. Documentation and Reporting:
a. Maintain accurate records of daily production metrics, including yield, output, quality checks, and waste levels.
b. Prepare and submit reports on production performance, quality control, and any incidents or issues encountered.
c. Document training sessions, equipment checks, and inspections for compliance and quality tracking.
