POSITION SUMMARY
The Meat Cutting Team Member is responsible for assisting in the preparation and processing of meat products in a high-volume commissary plant facility. This role involves performing tasks such as cutting, trimming, and packaging meat, following established safety, quality, and hygiene standards. The Meat Cutting Team Member plays a crucial role in ensuring that all meat products are processed efficiently and meet the company's quality standards.
DUTIES AND RESPONSIBILITIES
- Assist in receiving and inspecting incoming meat products, checking for quality and freshness before processing.
- Follow established procedures to cut, trim, debone, and portion meat according to specifications provided by the Meat Cutting Supervisor.
- Operate various meat cutting equipment, such as knives, saws, and grinders, adhering to safety protocols at all times.
- Ensure that all meat products are processed according to company quality standards, maintaining consistent size, weight, and appearance.
- Conduct visual inspections of meat cuts to identify and report any defects or quality issues to the Meat Cutting Supervisor.
- Package and label meat products accurately and securely for storage or distribution, ensuring that all products meet specifications.
- Assist in inventory management by accurately recording meat usage, waste, and leftovers to support effective stock control.
- Rotate stock according to the FIFO (First In, First Out) method to maintain freshness and reduce spoilage.
- Clean and sanitize work surfaces, equipment, and utensils regularly to ensure a hygienic working environment.
- Work collaboratively with other team members and supervisors to ensure smooth operations and efficient production flow.
- Communicate effectively with team members regarding production schedules, issues, and any changes in procedures.
- Assist with training new team members as needed, providing guidance on meat cutting techniques and safety protocols.
QUALIFICATION
- High school diploma or equivalent; vocational training in meat processing or culinary arts is a plus.
- Prior experience in meat cutting, food production, or a similar role is preferred but not required; on-the-job training may be provided.
- Ability to follow instructions carefully and maintain high standards in meat processing.
- Familiarity with cutting techniques and equipment operation in a safe manner.
- Ability to work efficiently in a fast-paced environment and meet production deadlines.
- Cooperative attitude with strong communication skills to support team dynamics and operations.
- Understanding of food safety regulations and practices to prevent contamination.
