PRIMARY ROLE & RESPONSIBILITIES

The Chef de Partie (CDP) - Japanese Cuisine is responsible for the efficient and professional operation of a specific section within the Japanese kitchen. This role requires a strong understanding of traditional and modern Japanese cooking techniques, a passion for culinary excellence, and the ability to maintain high standards of quality and presentation. The CDP will contribute to the creation and execution of authentic Japanese dishes, ensuring a memorable dining experience for guests.

Responsibilities:

  • Prepare and cook a variety of Japanese dishes, including sushi, sashimi, tempura, ramen, yakitori, and other specialized dishes, according to established recipes and standards.
  • Ensure consistent quality, portion control, and presentation of all dishes.
  • Maintain a thorough understanding of Japanese ingredients, flavors, and cooking techniques.
  • Prepare fresh ingredients, including seafood, vegetables, and other components, with precision and efficiency.
  • Master the art of knife skills specific to Japanese cuisine.
  • Execute cooking techniques such as grilling, frying, steaming, and simmering with accuracy.
  • Manage and organize the assigned kitchen section, ensuring a clean, safe, and efficient work environment.
  • Monitor and maintain adequate stock levels of ingredients and supplies.
  • Train and supervise junior kitchen staff within the section.
  • Menu Development and Innovation.

Qualifications:

  • Proven experience as a Chef de Partie or similar role in a reputable Japanese restaurant.
  • Strong knowledge of Japanese cuisine, including traditional and modern techniques.
  • Excellent knife skills and food preparation skills.
  • Ability to work efficiently and effectively under pressure.
  • Knowledge of food safety and hygiene regulations.
  • Experience with sushi and sashimi preparation is highly preferred.
