Restaurant Group Hygiene Manager

* Bachelor's Degree in Food Science, Microbiology, Hotel & Restaurant Management, or related field.

-At least 5 years of work experience in food safety, sanitation, or quality assurance in the F&B or hospitality industry, preferably in upscale or fine-dining restaurants.

-Strong knowledge of local health regulations, HACCP, ISO 22000, and other food safety standards.

-Experienced in implementing hygiene audits, food safety programs, and pest control management.

-Excellent leadership, training, and communication skills.

-Highly detail-oriented, organized, and able to enforce strict hygiene protocols.

-Ability to multi-site manage across different outlets.

Certification in Food Safety & Hygiene is an advantage.

Successful candidate shall perform the following:

  1. Hygiene and Sanitation Compliance

  2. Ensure all restaurants comply with local and international hygiene and food safety standards.

  3. Conduct regular inspections of kitchens, storage, preparation areas, and dining spaces.

  4. Monitor pest control programs and ensure corrective actions are taken immediately

  5. Standardize cleaning schedules, chemical usage, and sanitation procedures.

  6. Train staff on proper food handling, hygiene practices, and sanitation procedures.

  7. Ensure proper handling of raw seafood, meats, and other sensitive ingredients common in Japanese cuisine (e.g., sushi, sashimi).

  8. Prepare hygiene audit reports and present findings to management.
