Head Chef – Job Description & Responsibilities- Head Chef / Assistant Head Chef roles involve supporting the Head Chef in overseeing kitchen operations, ensuring the preparation and presentation of high-quality dishes, and maintaining an organized and efficient kitchen.
- Lead the kitchen team in the Head Chef's absence, contribute to menu planning, and ensure compliance with food safety and hygiene standards.
- Manage daily kitchen operations, including food preparation, cooking, and plating; oversee the efficient running of the kitchen and supervise/trains staff.
- Collaborate on menu development with seasonal ingredients and current culinary trends; develop recipes and test new dishes.
- Ensure adherence to food safety, hygiene, and sanitation regulations; monitor kitchen cleanliness and organization; conduct regular checks on storage and preparation practices.
- Assist in inventory management, including ordering and stock control; monitor ingredient levels and reorder to avoid shortages.
- Coordinate with front-of-house and management on service standards, guest dietary needs, and customer satisfaction.
- Maintain quality control with regular checks on dishes and ingredients; handle issues related to food quality professionally.
- Lead training and development of kitchen staff; assist in hiring when necessary; participate in daily briefings and training as required.

- Tekila Bar & Grill – Head Chef: 3–5 years in Mexican cuisine or similar; leadership, menu development, inventory management, cost control, food safety, and team management.
- Japonesa – Head Chef: Japanese-Peruvian fusion experience; menu development, staff leadership, cost control, inventory, and health/safety standards; strong leadership and organizational skills.
- Typical requirements across Makati postings include a culinary degree or equivalent training, 3–5 years of Head Chef or senior chef experience, strong knowledge of cuisine, inventory control, budgeting, and the ability to work a flexible schedule including weekends and holidays.
Common Qualifications
- Bachelor’s or diploma in Culinary Arts, Hotel & Restaurant Management, or related field (preferred or required depending on employer).
- Proven leadership and team management experience in a high-volume or upscale restaurant setting.
- Strong knowledge of food costing, portion control, inventory management, and sanitation standards.
- Ability to work under pressure, manage budgets, and drive innovative menu development.
- Excellent communication, organizational, and problem-solving skills.
- Willingness to work onsite at various Makati/Metro Manila locations; flexible hours including evenings, weekends, and holidays as required.
