I. POSITION SUMMARY

The Kitchen Crew / Back-of-House Staff is responsible for supporting the kitchen operations of the restaurant through proper food preparation, cleaning, sanitation, and maintenance of kitchen areas and equipment. This position ensures that all dishes are prepared to the highest standards of quality, presentation, and safety consistent with the restaurant's fine dining standards.

II. KEY RESPONSIBILITIES A. Food Preparation and Production

  • Assist chefs and cooks in the preparation of ingredients such as washing, cutting, portioning, and labeling.
  • Cook and plate menu items according to standard recipes and presentation guidelines.
  • Ensure food items are prepared and served within the proper temperature and timeframe.
  • Maintain the freshness, quality, and consistency of all dishes served.
  • Support daily mise en place (food prep) to ensure smooth kitchen operation during service hours.

B. Sanitation and Kitchen Maintenance

  • Maintain cleanliness and sanitation of kitchen areas, storage rooms, utensils, and equipment at all times.
  • Follow proper waste disposal, cleaning schedules, and dishwashing procedures.
  • Adhere strictly to food safety and hygiene standards in compliance with DOH and company policies.
  • Conduct regular checks on kitchen equipment and report any malfunction or maintenance need immediately.

C. Inventory and Supplies

  • Assist in receiving, checking, labeling, and storing deliveries and kitchen supplies.
  • Ensure proper rotation of stock (FIFO method) to minimize waste and maintain freshness.
  • Notify the Head Chef or Supervisor of low inventory levels or shortages.

D. Coordination and Teamwork

  • Coordinate closely with chefs, servers, and other kitchen staff to ensure timely food service.
  • Maintain a professional, cooperative, and respectful working relationship with all team members.
  • Follow all instructions from supervisors and support other kitchen stations as needed.

III. QUALIFICATIONS

  • Senior High School graduate or equivalent; vocational or culinary training is an advantage.
  • At least 1–2 years of experience in a fine dining or hotel kitchen setup preferred.
  • Knowledge of basic kitchen operations, food preparation, and sanitation standards.
  • Ability to work under pressure and in a fast-paced environment.
  • Physically fit to handle standing work and lifting kitchen items.
  • Punctual, reliable, and with a positive work attitude.
