QUALIFICATIONS:

  • Bachelor's degree in Hotel & Restaurant Management, Business Administration, Supply Chain Management, Culinary Management, or a related field (preferred).
  • Additional certifications in Procurement, Food Safety, or Supply Chain are an advantage.
  • 5 years of experience in purchasing or procurement within the hospitality, fine dining, hotel, or F&B industry.
  • Proven experience sourcing premium ingredients, specialty items, and luxury food and beverage products.
  • Strong vendor network and knowledge of high-quality suppliers, gourmet products, and seasonal market trends.

Skills:

  • Excellent negotiation, cost-control, and contract management skills.
  • Strong knowledge of food safety standards, product quality specifications, and proper storage/handling of perishable goods.
  • Ability to manage inventory systems.
  • Strong analytical and budgeting skills.
  • Exceptional attention to detail, especially regarding quality and freshness.
  • Effective communication and coordination skills with back of the house and operations teams.
  • Ability to work under pressure in a fast-paced, premium service environment.

RESPONSIBILITIES:

1. Procurement & Sourcing

  • Source and purchase high-quality ingredients, beverages, and supplies in line with the restaurant's culinary standards.
  • Identify and evaluate new suppliers to ensure product quality, freshness, and consistency.
  • Negotiate pricing, contracts, and delivery terms to obtain the best value without compromising quality.
  • Maintain strong relationships with premium suppliers, farms, fisheries, and specialty product distributors.

2. Inventory & Cost Control

  • Monitor inventory levels to ensure adequate stock of perishable and non-perishable items.
  • Implement proper inventory rotation (FIFO) to minimize spoilage and waste.
  • Work closely with the Chef and F&B Manager to forecast consumption and manage food cost targets.
  • Review and analyze purchase orders, invoices, and cost variances.

3. Quality Assurance

  • Inspect delivered goods to ensure they meet required standards of freshness, quality, and safety.
  • Coordinate with the culinary team regarding product specifications and substitutions when needed.
  • Address quality issues immediately with suppliers and arrange replacements.

4. Compliance & Documentation

  • Ensure all purchased items meet food safety, sanitation, and regulatory requirements.
  • Maintain accurate purchasing records, contracts, vendor files, and cost reports.
  • Prepare and submit regular purchase and cost summaries to management.

5. Coordination & Communication

  • Collaborate with the Head Chef, Sous Chef, Restaurant Manager, and accounting team regarding requirements, budgets, and menu changes.
  • Communicate upcoming price changes, product shortages, and market trends that may affect operations.

6. Operational Efficiency

  • Optimize ordering schedules to ensure timely delivery and avoid disruptions in kitchen operations.
  • Oversee storage management to ensure proper handling, temperature control, and product preservation.
  • Assist in developing and implementing procurement strategies to support menu innovation and seasonal offerings.
