Production Supervisor – Baking

Key Responsibilities

Supervise and coordinate with production teams on mixing, proofing, baking, cooling, slicing, and packaging lines.

Plan daily production schedules based on orders, inventory, and product specifications.

Ensure adherence to food safety standards such as HACCP, GMP, and company quality procedures.

Monitor dough consistency, baking temperatures, proofing times, and finished product quality.

Train employees on proper baking procedures, equipment handling, sanitation, and safety requirements.

Oversee equipment startup, operation, and shutdown procedures; coordinate maintenance for ovens, mixers, proofers, and packaging equipment.

Minimize production waste and downtime; implement process improvements to increase efficiency.

Complete daily production reports, monitor KPIs (yield, output, waste), and track ingredient usage.

Enforce safety policies and promote a safe working environment for all team members.

Qualifications

2 years of experience in commercial baking with at least 1 year in a supervisory role.

Strong understanding of baking processes (dough development, fermentation, baking curves, cooling, shelf-life).

Knowledge of food safety regulations (HACCP, GMP, sanitation).

Excellent leadership, communication, and problem-solving skills.

Ability to work in a hot, fast-paced production environment.

Basic computer skills; experience with production or ERP systems is a plus.
