Job Summary:
The Chef de Partie – Hot Kitchen is responsible for managing a specific section of the kitchen (hot line) and ensuring high standards of food quality, presentation, and hygiene. This role supports the Sous Chef and Executive Chef in daily kitchen operations and contributes to delivering excellent dining experiences for guests at Bluewater Maribago.
Key Responsibilities:
- Prepare and cook hot kitchen dishes according to standard recipes and quality standards.
- Supervise and coordinate the work of Commis Chefs and kitchen staff assigned to the hot section.
- Ensure food is prepared, cooked, and presented in a timely and consistent manner.
- Maintain cleanliness, sanitation, and safety standards in the kitchen at all times.
- Monitor food stock levels and assist in ordering and inventory control.
- Minimize food waste and ensure proper storage of ingredients.
- Follow hotel policies, HACCP standards, and food safety regulations.
- Assist in menu planning and development of new dishes when required.
- Report any equipment issues or maintenance needs to the Sous Chef or Executive Chef.
- Work closely with other kitchen sections to ensure smooth service operations.
Qualifications:
- At least 2–3 years of experience as Chef de Partie or Senior Commis in a hotel or resort kitchen.
- Strong knowledge of hot kitchen operations (grill, sauté, sauces, and main courses).
- Ability to work under pressure in a fast-paced environment.
- Good leadership and teamwork skills.
- Knowledge of food safety and sanitation standards (HACCP is an advantage).
- Willing to be assigned at Bluewater Maribago, Lapu-Lapu City, Cebu.
- Flexible with work schedules, including weekends and holidays.
