A bonesaw operator or meat cutter machine operator in a commissary is responsible for the precise, safe, and efficient processing of large cuts of meat into smaller, usable portions for distribution. This role requires strict adherence to food safety and sanitation guidelines and a strong attention to detail.

Key Responsibilities

Meat Processing:

  • Break down large cuts of pork and poultry carcasses into primal, sub-primal, and portion-controlled cuts using a band saw, meat slicer, knives, and other processing equipment.
  • Slice meat accurately and consistently to meet portion control guidelines.
  • Grind meat for various products ensuring proper texture and quality.

Machine Operation and Maintenance:

  • Set up, adjust, and operate meat processing machinery, including the bonesaw, slicers, and grinders, safely and efficiently.
  • Perform routine maintenance, disassembly, and thorough cleaning and sanitation of all equipment and work areas to maintain health and safety standards.
  • Report any equipment malfunctions or maintenance needs to the supervisor.
