Primary Objective of Position

The Cutter will oversee the preparation of ingredients, particularly meat, poultry, and

seafood. He/She will be responsible for ensuring that all cuts meet our quality

standards and are prepared according to recipes and portion sizes.

Essential Functions

-Supervises and participate in the cutting, trimming, and

portioning of meat, poultry, and seafood according to

established recipes and specifications.

-Ensures that all cuts meet our quality standards in terms of

freshness, texture, and appearance. Discards any items that

do not meet the required standards.

-Monitors inventory levels of meat, poultry, and seafood and

coordinate with the purchasing team to ensure adequate

supply. Minimizes waste and maintain proper storage and

rotation procedures.

-Adheres to strict hygiene and sanitation standards to prevent

cross-contamination and ensure food safety. Maintains a

clean and organized work area at all times.

-Trains and mentors kitchen staff, including assistants and

apprentices, in proper cutting techniques and safety

procedures.

-Works closely with the culinary team to coordinate production

schedules and ensure timely delivery of prepared ingredients

for cooking.

-Stays updated on industry trends and best practices in meat

preparation and butchery techniques. Shares knowledge and

insights with the team to enhance efficiency and quality.

-Follows all relevant health and safety regulations, as well as

company policies and procedures, to maintain a safe and

compliant work environment.

Requirements

-Proven experience as a butcher, meat cutter, or similar role in

a Chinese restaurant or culinary environment.

-Strong knowledge of Chinese cuisine and familiarity with

traditional ingredients and preparation methods.

-Excellent knife skills and proficiency in butchery techniques.

-Attention to detail and commitment to quality.

-Ability to work efficiently under pressure in a fast-paced

kitchen environment.

-Good communication and interpersonal skills.

-Flexibility to work early mornings, evenings, weekends, and

holidays as needed.
